(June 14-15)

Made burger with home made bun for dinner and air fried some tater tots for dinner. Kids approved!

I didn’t use any bun with use lettuce as my “bun” it was good but the down side was drown my burger with lingams chili sauce which is on a sweeter side.

 

Made Aglio e Olio and baked salmon for lunch too. It was a hit that day when I made it but when I offered to make it again they don’t want it lol

My “signature” perfect square bread. This time pumpkin bread.

success! I used coconut milk for my liquid and the bread was so fragrant. It was soft! I’m actually getting “bored” with the usual recipe i’ve been using hence i’m branching out to different recipe. 

Had salad with homemade shake and bake chicken breast since is so warm. Mr.7’s with Japanese sesame dressing

I put my air fryer on the deck when is hot so it doesn’t warm up my house when I’m using it. Mine with balsamic vinaigrette

Hubs requested for potato salad so I used my Instant pot to make “one pot” potato salad

All mixed up just need to put it in the fridge.

Then I made a whole chicken in my air fryer. Just anyhow mix some seasoning and put it on the chicken.

not bad. If my chicken is small enough I might air fry the whole chicken again.

Ate the chicken with salad for dinner.

Remaining of the chicken (I had to make more cause not enough) made chicken wild rice soup. I used my frozen Herman Starter to thicken the soup. @mrsergul I only have maybe one more packet left so not really waste of my effort also lol. Herman works really well as thickening agent and I actually like it.

While I was gone for the weekend the hubs and the kids almost finished the entire pot of soup. Apparently this one should be a repeat in the menu.

Last school lunch for year 2017-2018

Last school lunch for 1st grade. (He still has school tomorrow but is early release so he won’t be eating lunch in school) Home baked water kefir bread with homemade almond butter and jelly sandwich, tim tams, grapes, veggie straws and blueberry water kefir.

Bitter sweet for me because the kids are growing up extremely quick. I cannot believe that he will be going to grade 2. I remembered when I first send him to preschool and how excited he was to be going to school. We told him that when you go preschool you cannot wee wee in the diaper anymore (night) he stopped peeing in the diaper a few months before he started preschool. Very proud of his accomplishment and with what ever he puts his mind into doing something.

Mr.6 is not a difficult child but I’ve had my challenges with him too and because we are both stubborn. Apparently he’s at this age he’s already embarrassed by his parents being in school!! I spoke to his teacher about it before and she said she thought it was only in middle school kids starts getting embarrassed. (Wrote about this before!) Makes me sad because is like he’s so independent and growing up so quickly!!

Soldier on I guess..Luckily so far the little one still wants me. Not having another one lol

Lazy lunch and attempting (key word) to eat healthier. Stir fry cabbage with yesterday’s sweet and sour meat balls, and two eggs topped with thai chili padi.

Dinner consist of homemade hamburger patties on homemade burger buns topped with onions, tomatoes, lettuce, ketchup and mayo. My extremely failed fries.

I am so mad because I used this recipe many times before when I was pregnant with Mr.6 I used to have cravings for fries and I would make them this is the first time is a complete flop. It was soft and soggy but we still ate it cause no time to make more since it was getting late and dinner was behind schedule.

Churn another loaf of water kefir loaf. This time I added milled flax seed and a little whole wheat flour. Also I changed butter to coconut oil. I usually use coconut oil instead of butter for all breads I make at home.

Bread is still soft but a wee bit denser than the all white bread. Will have to try and see how it taste tomorrow.

Memorial day weekend camping.

*Been trying to update our memorial day weekend but the app keeps crashing on me hence i’ve not been able to update my post,

The place we camped was very rural. I had very little to no cell phone reception so I had /got to detox from social media. Since it was a last minute booking we didn’t get a campsite with full hookup. My minimal requirement was to at least have a toilet/shower close and the toilet has to be flushing toilet too. They do have the non flushing ones and is even cheaper but no thank you I can’t deal with that. We do have a shower and a toilet in the RV but I don’t like to use the shower there because is small and there is not much hot water supply hence I prefer to use the ones in the campsites and you will be surprise on how clean/acceptable the showers there are. Also because there is so many of us our holding tank will get full very fast if we all shower in the RV so because I am those kind that need to use “my own toilet” we were basically using our toilet and cleaning up in the RV.

It was nice in a way because we were not close to a playground like we were our last camping so the kids were not distracted but on the other hand the kids got bored and antsy since they couldn’t do much on their own.

Mr.6 got to bike up and down the walking path although by the end he kind of got that privileged taken away because he was biking at path that we didn’t approve of him going by himself in case he gets loss.

We went on a bike ride the second day after breakfast. The family approved of my homemade breakfast burritos (Which reminds me I need to get more ingredients to make more to freeze for when we go camping)

Hubs was pulling Mr.4 in the bike trailer while Mr.6 and I each rode on our own bike

The gorgeous area. The lake was still frozen 4 weeks ago!

Kids spend a few hours just playing with sand and water even though the water was cold in the HOT HOT weather

Even though the weather was pretty hot and standing in the nice cold water was sort of nice but it was still cold. It didn’t bother the kids at all. They were in their happy place!

Quick went back to the site and made brats on the grill. Warmed up a can of baked beans too

Today’s lunch is chicken salad (new recipe I got out of a mango, passion fruit jam which I should write it down for my own reference soon) with homemade flax seed whole wheat bread, Ferrero Rocher, Jalapeno Doritos, blueberry apple sauce and strawberry water kefir.

Managed to get some duck eggs. Needed a little more eggs so I used one chicken eggs. Guess which one is the chicken one?

After picking Mr.4 up from school and settling him started “work”

This is the first time I’m cooking directly in a pot. Used my Dutch oven for even heat. Works perfectly!

Labor after more than two hours of stirring.

Kids approved my Kaya. They loved it. I think using duck eggs to make Kaya makes a lot of difference! Hopefully this batch that I doubled will last me some time. I freeze everything except one bottle. Taste don’t change after I freeze them.

Dinner was grilled butterfly leg of lamb and grilled Bak choy. We were supposed to be getting rained in the next few days and the weather is so nice and warm although windy so I wanted to make use of my grill. I really like the taste of the lamb chops. Going to write it down for my own reference.

Asian grilled butterfly leg of lamb

Ingredients

2.5lbs lamb

Garlic powder

Soy sauce

Mirin

Sesame oil

Olive oil

Korean pepper flakes

Method

1) Marinate the lamb for as long as you want with the ingredients above.

2) Preheat grill for about 15 minutes. (I used gas grill here)

3) Grill lamb at medium high for about 4 minutes then about 8 minutes on the other side. Lamb should be medium if you want it more done cook for another 2 minutes.

I love to grill quick food! But dinner was slightly late because I couldn’t sleep last night and my head was pounding after I picked Mr.6 up so I took a quick nap after we got home.

Today’s lunch for the kid is homemade flex seed whole wheat bread with homemade nut butter and jelly sandwich, grapes, apple sauce, Ferrero Rocher and blueberry water kefir.

Boss wanted yogurt for lunch and a croissant (Mr.4) homemade yogurt with grapes, pineapple and homemade banana almonds Nutella granola.

I also made soy bean pulp bread with my pulp from making soy beans yesterday using my Herman starter but I cheated and added some yeast. They rose to the top but I had to pick Mr.6 up by time I came back they deflated and this happened. I don’t know if I baked it right away if it will still work.

So sad. Crumbly and dry 😭😭😭😭

Weather was nice today again and i wanted to use the grill so I went to the store again to get some chicken.

Made Korean grill chicken. Not bad but I prefer Korean fried chicken. Not as much work grilling them though. I wanted something different than the usual grill chicken I make hence Korean grill chicken inspired by Korean fried chicken.

Kids wanted broccoli so I grilled them too

Cranberry almond coleslaw poisoned by @notaitailife this time I used all Greek yogurt. Is ok not as nice as with mayo but Okla. In honesty mayo is not all bad is just eggs and oil.my hubs said I’m surprised you haven’t made your own mayo which I replied we don’t go through that much mayo for me to wanna make it cause it will just be wasted.

Prepared breakfast/snack for the hubs tonight too. home made yogurt with maple syrup and blueberries with homemade almond Nutella banana granola. Got to proof I make stuff for him too lol.

Lunch for the boss is sausage roll, straw, pineapple tarts, salted egg yolk cookies (almost gone) and blueberry kefir.

The weather has been so warm (52F) that I quickly took out a packet of ham steak and marinate them. I wanted to use my poor grill that has not been touch much this winter. Steak was well received Mr.6 said he didn’t want it even before I cooked it so I warmed up the emperor’s chicken for him and when he tried the steak he kept asking for it. He even requested for it tonight lol

I grilled some asparagus and I know the kids not a big fan of asparagus so I quickly chopped some pepper and onions toss some homemade taco seasoning and drizzle oil. Pepper and onions was well received by the boys and they even requested for that when we go camping. It’s basically fajitas without meat.

Love using the grill for simple meals can’t wait to use them more but I think I will get sick of it once we start camping. I’m researching different kind of food and recipes to take to camping with us now so we don’t get sick of the same old food.
